deconstruct an apple tart I just thought
that it would look more pretty

Benni there's not an element that's done
with anything short of perfection
Wow the way that you've cooked the
apples down was such a perfect amount of
sugar and cinnamon the cook on the tart
shell could not be more perfect you get
that sort of brown butter we know it's a
great texture at the bottom of it I
would have loved to see you take the
apples and maybe build them a little bit
higher or maybe you do another layer of
tart shell and builds that again but
that's really just to show off the
beauty of this dessert even more and to
give me more to eat I love it thank you
I'm not a big fan of the whole
deconstructing thing but well you were
able to do here and your deconstruction
is to isolate and exalt all the
individual flavors that a apple tart
like this would have perfectly cooked
apples crust better make one comment
perhaps the pastry cream is a bit too
gelatinous okay like it a little bit
more creamier a little anxious aside
from that kind of perfection reminds me
of desserts that my grandmother cooks

never called myself a gentleman it's
fragrant it's delicious you know to be
that bold and that tenacious to
deconstruct something you need to know
at the other end it's as good as
original and it definitely is
